Well, today I learned that I slipped up! I have been eating quite a bit of beans- black beans, mostly- and have just been bringing a can with me to work as I have been in and out of town so much and have basically no fresh food in my apartment. Well, apparently canned black beans are not gluten free… so it’s a bummer but now I know and will make the adjustment to my diet. I guess that’s what this is all about anyways, learning what my body likes and doesn’t, so lets see what this change brings about!

This weekend proved to be even tougher than my weekend in the Hamptons. I’m guessing this is for a few reasons: 1) In the Hamptons I was with a group of people that are very health conscious – one was a nutritionist and two are dedicated marathon runners who are also gluten free; 2) Going gluten free isn’t only a new idea and new way I’m living at this point- it’s a reality (why is it that it’s so much easier to keep motivated when it’s a new lifestyle change?); and 3) we spent much more time hanging out at the beach rather than out and about, which lends itself to great tanning but with that comes all of the snacking! I made it through and even got myself to go on a run on Saturday!

Today I felt great- my weight is still at the ‘4 pound less than when I began’ mark and I felt light inside. I actually want to workout everyday- there is a new energy inside of me. I am heading to Cape Cod tonight for a weekend with friends so I’m sure it will be a bit challenging again (as it always is to be disciplined while on vacation) but I’m sure I’ll get through it!

I am still full from last night’s dinner! I went to a relative’s house and we barbequed salmon filets and more veggies than you could imagine. If I did that every night I truly would not have an issue with carb cravings- not that I do at this point but every once and a while, for example, when I saw my cousins eating Oreos last night, I get a jolt of jealousy. Following my jealous angst though is a quick mental reminder that I feel so good without it, and I move on. If I am really craving something sweet I go for a spoonful of peanut butter or handful of chocolate chips to satisfy my sweet-tooth!

Every Wednesday morning I attend a networking meeting at the crack of dawn…. The positives that has always come out of it (other than prospective business leads) are the delicious chocolate croissants. Well, this morning I filled up my plate with fruit and loaded up on coffee instead of diving into the bagel and croissant basket- it was a little tough but I left the meeting feeling great. I had a lunch of beans and soft-boiled eggs (I know, a bit random but I still haven’t hit the grocery store!) and felt ready to hit a bikram yoga class after work! Last night I was talking to a good friend who went gluten free about 3 months ago and she said you only feel better and it only gets easier as time goes on! We shall see...

I had my first ‘protein style burger’ today! For those of you that don't know, a 'protein style burger' is a burger with all the fixins wrapped in lettuce rather than a bun. It was so tasty and fresh- I didn’t feel like I was missing out at all! I am feeling great this week- light, energetic and clear-headed. I am having the most regular bowel movements I have ever had. I love being gluten free.

As I was out of town all weekend I have absolutely no food in my apartment! So, after scavenging through my kitchen cabinets this morning I decided to grab some almonds, soft boil two eggs and whip up a can of tuna for lunch. Considering my lunch was pure protein, I was not snacky at all and felt full all day. I grabbed a glass of wine in the evening (almost got a beer then realized that was off limits!) and a small dinner before turning in for the night… with a smile on my face knowing I lasted a whole week gluten free and it wasn’t as tough as I expected!

This past weekend was the most challenging since I decided to go gluten-free. I went to the Hamptons with a big group of friends and was surrounded in delicious, gluten-laden food all weekend- from lobster rolls to pizza for dinner and bagels and sandwiches for breakfast. I was put to the test the entire trip and am happy / proud to say that I didn’t cave!! I ate the cheese off of the top of the pizza and got salads instead of sandwiches. While everyone snacked on chips, I pulled out some almonds and dried fruit. Not only am I happy (mentally) to have not given in but my body feels good- today doesn’t have that guilty undertow that many Mondays following weekends away usually do! Another exciting little detail- I actually see a difference in my waist- my stomach looks flatter!

Even after having a few cocktails last night I did not crave carbs this morning! Usually I wake up after a night out, I immediately think about eating anything that is heavy and full of carbs to ‘soak up the damage I did the night before’. Today I woke up, made two soft-boiled eggs and some strawberries and didn’t miss the English muffin or bagle sandwich. After my lunch of a veggie stir-fry and quinoa, I got crampy and was a bit uncomfortable but it passed- I’m guessing it was just my body adjusting. Basically the entire day I felt great- full of energy, lighter than I did a week ago and without any desire to eat gluten-loaded products. I noticed that these last two days I've been craving protein so for dinner I made myself pork tenderloin and a strawberry coconut milk smoothie for dessert.

I felt great all day today- really, really great. I got on the scale after work and was 4 pounds lighter than 3 days ago!! I am having much more regular bowel movements (which has never happened for me). Though I don’t think I LOOK 4 pounds lighter, I feel better inside- like I had a weight lifted off of my stomach. I am surprised to not have any carb cravings. Dinner was a bit challenging as it was my first time going out to eat; some friends and I met for drinks and appetizers at a Mexican food restaurant. I didn’t touch the quesadillas or crostini, I ate the meat off of the top and had some shrimp cocktail instead. I left feeling perfectly satisfied rather than bogged down by greasy, heavy appetizers, which was nice for a change!
